Black Garlic Is a transformation of fresh garlic into a gourmet delicacy that is a culinary delight, favoured by top chefs and home cooks for its ease of use and wonderful flavour.
It is black, with a soft, tender texture, and has a unique taste reminiscent of umami, caramel, and sweet molasses, still clearly garlic but without the bite of the fresh cloves.
Our black garlic is produced through an intensive process of controlled temperature and humidity applied for several weeks to Tasmanian grown, chemical and spray free garlic. There are no additives, no preservatives, just natural garlic. It is not a fermentation process but rather produces the maillard effect—the same process that caramelises onions—and there is no garlic breath! It will keep well in the refrigerator for up to six months—if there’s any left for that long!
