Black Garlic should become the hero ingredient in a dish to showcase its unique fusion of umami, caramel and other subtle flavours.
As it doesn’t change very much when you cook with it, it’s very easy to simply add more to taste at any stage of cooking.
It should keep for at least 12 months, just keep it sealed in the fridge.
If it gets dry, simply add a little water and let it reconstitute.
Black Garlic should never be used instead of fresh garlic, but definitely in tandem with it!
