Roast with Vegetables
Massage olive oil and salt into prepared vegetables and sprinkle with cumin seed. Roast in a hot oven. About half way through, throw a handful of fresh garlic cloves into the pan. You can leave the skin on, and easily push out the soft garlic when it is cooked.
Baked Pumpkin Salad
Thinly slice pumpkin and roast with fresh garlic cloves on high heat and allow the pumpkin to blacken slightly. Toss with mixed salad greens and vinaigrette. Optional extras—select from finely shaved Parmesan cheese, sliced green olives, anchovies, prosciutto, artichoke hearts.
Whole Roast Bulbs
Dribble a little olive oil over a whole garlic bulb and slow roast until soft. There’s no need to peel it as the garlic can be pushed out from the skin with a knife as a paste. Wonderful spread on all kinds of meat, and great with roast or steamed vegetables.
